Ingredients
- ½ cup sliced onion
- ½ cup sliced red bell pepper
- 1 lb boneless, skinless chicken breasts
- ½ (20-oz) can pineapple chunks in juice, drained
- ½ (12-oz) bottle sweet and sour sauce
- ¼ cup less sodium chicken broth
Instructions
- Place onion and bell pepper in a greased 3- to 4-quart slow cooker; top with chicken and pineapple.
- Combine sweet and sour sauce and broth in a bowl; pour into cooker.
- Cover and cook on LOW 5 to 6 hours or until chicken is done. Remove chicken, and chop. Return chicken to slow cooker.
- Serve chicken mixture over Jasmine Rice recipe.
Side Dish Ingredients
- 1 (3.5-oz) pouch boil in bag jasmine rice
- ½ (20-oz) pkg frozen broccoli stir fry
- 1½ Tbsp sesame oil
- 1½ Tbsp less sodium soy sauce
Side Dish Instructions
- Prepare rice according to package directions.
- Steam vegetables according to package directions; stir in oil and soy sauce.
