Ingredients

  • ½ cup sliced onion
  • ½ cup sliced red bell pepper
  • 1 lb boneless, skinless chicken breasts
  • ½ (20-oz) can pineapple chunks in juice, drained
  • ½ (12-oz) bottle sweet and sour sauce
  • ¼ cup less sodium chicken broth

Instructions

  1. Place onion and bell pepper in a greased 3- to 4-quart slow cooker; top with chicken and pineapple.
  2. Combine sweet and sour sauce and broth in a bowl; pour into cooker.
  3. Cover and cook on LOW 5 to 6 hours or until chicken is done. Remove chicken, and chop. Return chicken to slow cooker.
  4. Serve chicken mixture over Jasmine Rice recipe.

  • 1 (3.5-oz) pouch boil in bag jasmine rice
  • ½ (20-oz) pkg frozen broccoli stir fry
  • 1½ Tbsp sesame oil
  • 1½ Tbsp less sodium soy sauce

Side Dish Instructions

  1. Prepare rice according to package directions.
  2. Steam vegetables according to package directions; stir in oil and soy sauce.
