Shrimp Nigiri

Ingredients
- 3 (7.4-oz) pkg white sticky rice
- 4 green onions, finely chopped
- 1 Tbsp sesame seeds
- 3 Tbsp rice vinegar
- 2 tsp granulated sugar
- 1 lb cooked, peeled and deveined, medium shrimp
- 1 avocado, cubed
- ½ (2-oz) container microgreens
- ⅓ cup Sriracha hot sauce
Instructions
- Heat rice according to package directions. Stir together rice, chopped green onion, and sesame seeds.
- Meanwhile, microwave vinegar and sugar in a small bowl, in 30 second intervals, stirring between each, until sugar is dissolved. Add to rice mixture, stirring to blend.
- Shape rice mixture into 1½-inch oblong rolls. Top each with one shrimp, one avocado cube, and microgreens. Serve with Sriracha sauce.
