Ingredients

  • ¾ lb boneless pork chops
  • ¼ tsp salt, divided
  • ⅛ tsp pepper
  • 2 Tbsp all purpose flour
  • 2 tsp olive oil
  • 1 Tbsp butter
  • ⅓ cup chopped red onion
  • 1 (8-oz) pkg sliced mushrooms
  • ¼ cup dry Marsala wine
  • ¼ cup less sodium chicken broth

Instructions

  1. Sprinkle pork with ⅛ tsp salt and pepper; dredge in flour, shaking off excess.
  2. Cook pork in hot oil in a skillet over medium-high heat 2 to 3 minutes per side or until browned. Remove from skillet.
  3. Melt butter in skillet; add onion, mushrooms, and ⅛ tsp salt. Cook, stirring occasionally, 7 to 8 minutes or until tender. Stir in wine and broth; bring to a boil.
  4. Return pork to skillet; reduce heat, and simmer 3 to 4 minutes or until sauce is thickened.

  • ½ (24-oz) container refrigerated mashed potatoes
  • 1 cup spinach

Side Dish Instructions

  1. Heat potatoes according to package directions. Stir in spinach until wilted.
