Ingredients
- ¾ lb boneless pork chops
- ¼ tsp salt, divided
- ⅛ tsp pepper
- 2 Tbsp all purpose flour
- 2 tsp olive oil
- 1 Tbsp butter
- ⅓ cup chopped red onion
- 1 (8-oz) pkg sliced mushrooms
- ¼ cup dry Marsala wine
- ¼ cup less sodium chicken broth
Instructions
- Sprinkle pork with ⅛ tsp salt and pepper; dredge in flour, shaking off excess.
- Cook pork in hot oil in a skillet over medium-high heat 2 to 3 minutes per side or until browned. Remove from skillet.
- Melt butter in skillet; add onion, mushrooms, and ⅛ tsp salt. Cook, stirring occasionally, 7 to 8 minutes or until tender. Stir in wine and broth; bring to a boil.
- Return pork to skillet; reduce heat, and simmer 3 to 4 minutes or until sauce is thickened.

- 1 cup spinach

- Heat potatoes according to package directions. Stir in spinach until wilted.
