Ingredients

  • 1½ lb boneless, skinless chicken thighs, cubed
  • ½ tsp salt
  • ½ tsp pepper
  • 1 onion, chopped
  • 2 Tbsp olive oil
  • 1 Tbsp ground turmeric
  • ½ tsp garlic powder
  • ¾ cup less sodium chicken broth
  • ¾ cup heavy cream
  • ¼ cup chopped fresh cilantro

Instructions

  1. Sprinkle chicken with salt and pepper. Cook chicken and onion in hot oil in a large skillet 6 to 8 minutes or until browned. Stir in turmeric and garlic powder.
  2. Add broth and cream to skillet; cook 5 to 6 minutes or until sauce is thickened and chicken is done. Top with cilantro.

  • 2 (12-oz) pkg frozen riced cauliflower
  • 2 Tbsp chopped fresh cilantro
  • 2 Tbsp olive oil
  • ½ tsp salt
  • ¼ tsp pepper
