Garlic-Butter Salmon
Warm Potato and Broccolini SaladIngredients
- ¾ lb salmon fillets, patted dry
- ¼ tsp salt
- ¼ tsp pepper
- 2 tsp olive oil
- 1½ Tbsp butter, softened
- 1 Tbsp finely chopped fresh parsley
- 2 cloves garlic, minced
Instructions
- Sprinkle fish with salt and pepper. Cook fish in hot oil in a skillet over medium-high heat 3 to 4 minutes per side or until fish flakes with a fork.
- Combine butter, parsley, and garlic; spread on fish.
Side Dish Ingredients
- 1 Yukon gold potato, cut into 1 inch pieces
- ½ lb Broccolini, cut into 2 inch pieces
- ¼ cup freshly grated Parmesan cheese
- 1½ Tbsp olive oil vinaigrette
- 2 Tbsp chopped fresh parsley
- ¾ tsp Italian seasoning
- ¼ tsp pepper
Side Dish Instructions
- Place potatoes and 2 Tbsp water in a microwave-safe bowl; cover with plastic wrap, leaving a small vent. Microwave at HIGH 6 minutes.
- Add Broccolini to potatoes; cover and microwave at HIGH 2 to 4 minutes or until potatoes are tender when pierced with a fork. Drain.
- Gently toss potato mixture with remaining ingredients in a medium bowl.
