Shrimp and Bacon Skillet

Ingredients

  • 4 slices center cut bacon
  • 1 lb peeled and deveined, large raw shrimp
  • 1 Tbsp minced garlic
  • ¼ cup less sodium chicken broth
  • ¼ cup white wine
  • 1 Tbsp chopped fresh parsley

Instructions

  1. Cook bacon in a skillet over medium heat 6 to 8 minutes or until crisp; drain, reserving 2 Tbsp drippings in skillet. Crumble bacon.
  2. Cook shrimp in hot drippings in skillet over medium-high heat 2 to 3 minutes per side or until shrimp are done. Remove from skillet, and keep warm.
  3. Sauté garlic in skillet 1 minute or until fragrant. Stir in broth and wine, scraping skillet to loosen browned bits; cook 2 to 3 minutes or until slightly thickened. Stir in shrimp, bacon, and parsley. Serve shrimp over Herb-Cheese Cauliflower "Grits" recipe.

Side Dish Ingredients

  • 1 (12-oz) pkg frozen mashed cauliflower
  • ½ (12-oz) pkg frozen riced cauliflower
  • ½ cup garlic herb spreadable cheese
  • 2 Tbsp heavy cream 

Side Dish Instructions

  1. Microwave mashed cauliflower and riced cauliflower separately according to package directions. Drain riced cauliflower, if needed.
  2. Mix together riced cauliflower, mashed cauliflower, cheese, and cream in a medium bowl until blended.
