Shrimp and Bacon Skillet
Herb-Cheese Cauliflower "Grits"Ingredients
- 4 slices center cut bacon
- 1 lb peeled and deveined, large raw shrimp
- 1 Tbsp minced garlic
- ¼ cup less sodium chicken broth
- ¼ cup white wine
- 1 Tbsp chopped fresh parsley
Instructions
- Cook bacon in a skillet over medium heat 6 to 8 minutes or until crisp; drain, reserving 2 Tbsp drippings in skillet. Crumble bacon.
- Cook shrimp in hot drippings in skillet over medium-high heat 2 to 3 minutes per side or until shrimp are done. Remove from skillet, and keep warm.
- Sauté garlic in skillet 1 minute or until fragrant. Stir in broth and wine, scraping skillet to loosen browned bits; cook 2 to 3 minutes or until slightly thickened. Stir in shrimp, bacon, and parsley. Serve shrimp over Herb-Cheese Cauliflower "Grits" recipe.
Side Dish Ingredients
- 1 (12-oz) pkg frozen mashed cauliflower
- ½ (12-oz) pkg frozen riced cauliflower
- ½ cup garlic herb spreadable cheese
- 2 Tbsp heavy cream
Side Dish Instructions
- Microwave mashed cauliflower and riced cauliflower separately according to package directions. Drain riced cauliflower, if needed.
- Mix together riced cauliflower, mashed cauliflower, cheese, and cream in a medium bowl until blended.
