Blackened Shrimp Salad

Ingredients
- ½ (12-oz) pkg bacon, chopped
- 1 lb peeled and deveined, large raw shrimp
- ½ Tbsp blackened seasoning
- 1 (5-oz) pkg spring mix
- 1 Granny Smith apple, chopped
- ⅓ cup crumbled blue cheese
- ¼ cup candied pecans
- 3 Tbsp balsamic vinaigrette
Instructions
- Cook bacon in a skillet over medium heat 6 to 8 minutes or until crisp; remove from skillet, reserving 1 Tbsp drippings in skillet.
- Sprinkle shrimp with seasoning. Cook shrimp in hot drippings in skillet over medium-high heat 2 to 3 minutes per side or until done.
- Meanwhile, toss together spring mix, bacon, apple, cheese, nuts, and dressing in a medium bowl. Serve shrimp over salad.
