Ingredients

  • 1 red or yellow bell pepper, chopped
  • 1 shallot, chopped
  • 1½ Tbsp olive oil
  • 1 lb peeled and deveined, large raw shrimp
  • ¼ tsp salt
  • ¼ tsp pepper
  • ½ cup less sodium chicken broth
  • ½ cup heavy cream
  • 1 tsp smoked paprika
  • ½ (5-oz) pkg baby spinach

Instructions

  1. Cook bell pepper and shallot in hot oil in a skillet over medium-high heat 6 to 8 minutes or until lightly browned and tender. Add shrimp, salt, and pepper. Cook 2 minutes.
  2. Stir in broth, cream, and paprika; cook 3 minutes. Stir in spinach; cook 2 minutes or until spinach wilts and shrimp are done.
