Dill-Ranch Chicken

Roasted Potatoes and Broccoli

Ingredients

  • ¾ lb boneless, skinless chicken breasts
  • 1 Tbsp Ranch dressing mix
  • ⅛ tsp salt
  • ⅛ tsp pepper
  • 2 tsp olive oil
  • 3 Tbsp Ranch dressing
  • 1 Tbsp chopped fresh dill

Instructions

  1. Preheat oven to 400°F. Toss together chicken, Ranch mix, salt, and pepper until well coated.
  2. Heat oil in a large cast-iron skillet over medium-high heat. Cook chicken on one side 5 minutes or until browned. Turn chicken, and transfer skillet to oven; bake 13 minutes or until done.
  3. Meanwhile, stir together Ranch dressing and dill. Serve with chicken.

  • ½ lb small red potatoes, halved
  • ½ (12-oz) pkg broccoli florets
  • 2 Tbsp olive oil
  • ¾ tsp Italian seasoning
  • ¼ tsp salt
  • ¼ tsp pepper

Side Dish Instructions

  1. Preheat oven to 400°F. Toss together all ingredients on a rimmed baking sheet; spread in a single layer.
  2. Roast 20 to 25 minutes or until browned and tender.
