Grapefruit-Basil Gintini

Ingredients

  • ½ cup granulated sugar
  • ½ cup water
  • ½ (0.5-oz) pkg fresh basil
  • 3 Tbsp gin
  • 3 Tbsp grapefruit juice
  • Ice cubes
  • 1 Tbsp sparkling water
  • Garnish: quartered grapefruit slice, basil leaf

Instructions

  1. Combine sugar, water, and basil in a small saucepan over medium heat, stirring until sugar dissolves. Bring to a boil, reduce heat, and simmer 5 minutes. Remove from heat; cool 15 minutes.
  2. Strain mixture, discarding basil. Basil simple syrup makes ¾ cup.
  3. Add gin, juice, and 1 to 1½ Tbsp basil simple syrup to a mixing glass filled half full with ice; stir 10 seconds until well chilled. Strain gin mixture into a coupe glass. Top with sparkling water. Garnish, if desired.
