Peanut Butter and Jelly Cups

Ingredients

  • 1 (16-oz) jar natural creamy peanut butter
  • 1½ Tbsp honey
  • ½ cup coconut oil, melted
  • ½ tsp salt
  • ½ cup strawberry jelly

Instructions

  1. Line a 12-cup muffin pan with standard baking cups. Process peanut butter, honey, oil, and salt at high speed in a blender or food processor until smooth. Divide among muffin cups.
  2. Spoon 1 to 2 tsp jelly into each cup, and swirl into peanut butter mixture using a wooden pick. Freeze 15 minutes or until hardened. Thaw slightly before serving.
