Preheat oven to 425°F. Cut each chicken breast in half crosswise and pound to an even thickness between plastic wrap using a meat mallet.
Lightly season chicken with salt and pepper, if desired. Stir together mayonnaise and mustard in a small bowl. Stir together breadcrumbs, crushed onions, and cheese in a shallow dish.
Brush chicken all over with mayonnaise mixture; dredge in breadcrumb mixture to coat. Place on a lightly greased wire rack over a rimmed baking sheet. Bake 20 minutes or until golden brown and done.
