Superfood Salmon Salad

Ingredients

  • 1 (1-lb) salmon fillet
  • ¼ tsp salt
  • ¼ tsp pepper
  • 1 Tbsp olive oil
  • 1 (5-oz) pkg baby arugula
  • 2 navel oranges, peeled and segmented
  • 1 avocado, sliced
  • ¼ cup olive oil vinaigrette

Instructions

  1. Preheat oven to 450°F. Sprinkle fish with salt and pepper; drizzle with oil. Bake 12 to 15 minutes or until fish flakes with a fork. Break fish into large pieces.
  2. Divide arugula, fish, oranges, and avocado among 4 bowls or to-go containers. Serve with vinaigrette.
