Superfood Salmon Salad
Ingredients
- 1 (1-lb) salmon fillet
- ¼ tsp salt
- ¼ tsp pepper
- 1 Tbsp olive oil
- 1 (5-oz) pkg baby arugula
- 2 navel oranges, peeled and segmented
- 1 avocado, sliced
- ¼ cup olive oil vinaigrette
Instructions
- Preheat oven to 450°F. Sprinkle fish with salt and pepper; drizzle with oil. Bake 12 to 15 minutes or until fish flakes with a fork. Break fish into large pieces.
- Divide arugula, fish, oranges, and avocado among 4 bowls or to-go containers. Serve with vinaigrette.
