Green Pea-Ricotta Toasted Gnocchi

Ingredients

  • ½ lemon
  • 1 (16-oz) pkg potato gnocchi
  • 1 Tbsp olive oil
  • ½ (12-oz) pkg frozen sweet peas, thawed
  • 2 small cloves garlic, minced
  • ¼ tsp salt
  • ¼ tsp pepper
  • ½ cup whole milk ricotta cheese
  • ¼ cup half and half
  • 2 Tbsp chopped fresh basil
  • ¼ cup freshly shaved vegetarian Parmesan cheese

Instructions

  1. Grate zest and squeeze juice from lemon half.
  2. Cook gnocchi in hot oil in a large skillet over medium-high heat 7 to 8 minutes or until toasted, stirring occasionally.
  3. Add peas, garlic, salt, and pepper; cook 3 to 4 minutes or until tender, stirring occasionally.
  4. Reduce heat to medium-low. Stir in ricotta, half-and-half, lemon zest, lemon juice, and basil; cook 2 minutes or until thoroughly heated. Sprinkle with Parmesan and, if desired, more basil.
