Chicken Thighs with Peanut Sauce

Ingredients

  • 2 Tbsp less sodium soy sauce, divided
  • 1 Tbsp honey, divided
  • 1 tsp sesame oil
  • 1 Tbsp minced garlic
  • ¾ lb boneless, skinless chicken thighs
  • 2 Tbsp chopped fresh cilantro
  • 2 Tbsp warm water
  • 2 Tbsp creamy peanut butter
  • ¼ tsp crushed red pepper

Instructions

  1. Preheat broiler. Combine 1½ Tbsp soy sauce, 2 tsp honey, oil, and garlic; brush over chicken on a foil-lined baking sheet. Broil on top oven rack 8 to 10 minutes per side or until done.
  2. Combine cilantro, water, peanut butter, ½ Tbsp soy sauce, 1 tsp honey, and red pepper. Serve sauce with chicken.

  • ½ (13.6-oz) chopped Asian sesame salad kit
  • ½ cup sliced English cucumber
  • 2 Tbsp chopped fresh cilantro

Side Dish Instructions

  1. Prepare salad kit according to package directions; stir in cucumber and cilantro.
