Teriyaki Meatloaf

Rice Pilaf and Steamed Broccoli

Ingredients

  • 2 lb ground beef
  • ¾ cup quick cooking oats
  • ½ cup teriyaki sauce, divided
  • 2 large eggs, lightly beaten
  • 1 tsp garlic powder

Instructions

  1. Preheat oven to 400°F. Combine beef, oats, ¼ cup teriyaki sauce, eggs, and garlic powder in a large bowl, stirring to blend. Press mixture into a lightly greased 9-inch loaf pan.
  2. Spoon ¼ cup teriyaki sauce over meatloaf. Bake 1 hour or until no longer pink in center. Let stand 10 minutes before slicing.

  • 2 Tbsp butter
  • 2 cups long grain white rice
  • 1 (32-oz) carton chicken broth
  • 2 (12-oz) pkg broccoli florets

Side Dish Instructions

  1. Melt butter in a large saucepan over medium heat; add rice, and cook 1 minute. Stir in broth. Bring to a boil; cover, reduce heat, and simmer 18 to 20 minutes or until rice is tender.
  2. Steam broccoli according to package directions. Season with salt and pepper, if desired.
