Greek Beef and Orzo

Balsamic Spinach Salad

Ingredients

  • ½ lb ground beef
  • ½ onion, diced
  • 3 Tbsp tomato paste
  • 2 Tbsp chopped fresh mint, divided
  • ¼ tsp salt
  • ⅛ tsp ground cinnamon
  • ⅛ tsp pepper
  • 1⅔ cups cup water
  • ½ cup orzo

Instructions

  1. Cook beef and onion in a Dutch oven over medium-high heat 8 minutes or until browned and crumbly. Drain and return to pot.
  2. Add tomato paste, 1 Tbsp mint, salt, cinnamon, and pepper, stirring to coat beef. Cook 2 to 3 minutes or until thoroughly heated.
  3. Add water; bring to a boil. Add orzo; stir. Cover, reduce heat, and simmer 10 minutes or until orzo is done, stirring occasionally. Sprinkle with 1 Tbsp mint.



Side Dish Ingredients

  • 2 cups spinach
  • 2 Tbsp balsamic vinaigrette

Side Dish Instructions

  1. Toss together spinach and vinaigrette in a bowl.
