Creamy Balsamic Chicken

Ingredients

  • 2 lb boneless, skinless chicken breasts
  • ¼ cup butter
  • 1 (8-oz) pkg sliced mushrooms
  • 1 Tbsp minced garlic
  • 2 Tbsp balsamic glaze
  • 1 cup heavy cream
  • ¾ cup chicken broth
  • ½ cup shredded Parmesan cheese

Instructions

  1. Cut chicken in half crosswise and pound to an even thickness between plastic wrap using a meat mallet. Season chicken with salt and pepper, if desired.
  2. Melt butter in a large nonstick skillet over medium heat. Add chicken, and cook 3 minutes per side or until browned. Remove from skillet.
  3. Add mushrooms and garlic to skillet; cook 5 minutes. Add balsamic glaze and cook 1 minute. Stir in cream and broth. Return chicken to skillet and bring to a boil; reduce heat, and simmer 5 minutes or until sauce is thickened and chicken is done. Sprinkle with cheese.

  • 2 (10-oz) pkg asparagus spears
  • 1 (32-oz) pkg refrigerated mashed potatoes

Side Dish Instructions

  1. Heat potatoes according to package directions.
  2. Steam asparagus according to package directions; season with salt and pepper, if desired.
