Sweet Chile Roasted Cauliflower

Ingredients

  • 2 heads cauliflower, cut into large florets
  • 3 Tbsp olive oil
  • ⅔ cup sweet chile sauce
  • ¼ cup rice vinegar
  • 2 Tbsp honey
  • 2 Tbsp soy sauce
  • 3 green onions, thinly sliced
  • 2 red chile peppers, thinly sliced

Instructions

  1. Preheat oven to 425°F. Toss together cauliflower florets and oil on a lightly greased large rimmed baking sheet. Spread in a single layer. Season with salt and pepper, if desired.
  2. Bake 25 minutes or until browned.
  3. Meanwhile, stir together chile sauce, vinegar, honey, and soy sauce in a small saucepan. Bring to a boil, reduce heat, and simmer 5 minutes or until mixture is thick and syrupy. Toss with hot roasted cauliflower.
  4. Sprinkle with green onion and chile peppers. Serve with wooden skewers, if desired.
