Sweet Chile Roasted Cauliflower

Ingredients
- 2 heads cauliflower, cut into large florets
- 3 Tbsp olive oil
- ⅔ cup sweet chile sauce
- ¼ cup rice vinegar
- 2 Tbsp honey
- 2 Tbsp soy sauce
- 3 green onions, thinly sliced
- 2 red chile peppers, thinly sliced
Instructions
- Preheat oven to 425°F. Toss together cauliflower florets and oil on a lightly greased large rimmed baking sheet. Spread in a single layer. Season with salt and pepper, if desired.
- Bake 25 minutes or until browned.
- Meanwhile, stir together chile sauce, vinegar, honey, and soy sauce in a small saucepan. Bring to a boil, reduce heat, and simmer 5 minutes or until mixture is thick and syrupy. Toss with hot roasted cauliflower.
- Sprinkle with green onion and chile peppers. Serve with wooden skewers, if desired.
