Preheat oven to 400°F. Cut chicken in half crosswise, and pound to an even thickness between 2 pieces of plastic wrap using the heel of your hand or a meat mallet; sprinkle lightly with salt and pepper, if desired.
Wrap 2 bacon strips around each chicken breast. Cook chicken in a large nonstick skillet 3 to 4 minutes per side or until bacon begins to brown. Transfer chicken to a foil-lined rimmed baking sheet.
Bake 10 minutes or until chicken is done and bacon is crisp.
Meanwhile, add onion and garlic to drippings in skillet; cook, stirring often, 4 minutes. Add flour; cook, stirring constantly, 2 minutes.
Stir in broth, vinegar, and mustard; cook 2 to 3 minutes or until sauce is thickened. Spoon sauce over chicken.
