Chicken-Spinach Pasta

Ingredients

  • 4 oz bow tie pasta
  • 2 Tbsp butter
  • ¾ lb boneless, skinless chicken breasts, cut into bite-size pieces
  • ½ (16-oz) container spinach dip
  • ¼ cup shredded Parmesan cheese

Instructions

  1. Cook pasta according to package directions; drain, reserving ⅓ cup pasta water.
  2. Meanwhile, melt butter in a large skillet over medium-high heat. Add chicken, and cook 5 minutes or until browned and done. Reduce heat to medium-low.
  3. Add spinach dip to skillet; cook, stirring occasionally, 5 minutes or until thoroughly heated. Add cooked pasta and reserved pasta water; cook, stirring, 2 to 3 minutes or until blended.
  4. Divide pasta mixture between 2 shallow bowls; sprinkle with cheese.

  • ½ (6-count) pkg frozen garlic breadsticks

Side Dish Instructions

  1. Bake 2 breadsticks according to package directions.
