Sausage and Pepperoni Pizza Boats

Ingredients

  • 1 lb ground Italian sausage
  • 3 sub rolls, split
  • 2 Tbsp olive oil
  • 2 tsp Italian seasoning
  • 1 cup pizza sauce
  • 1 cup pepperoni
  • 1 (8-oz) pkg shredded mozzarella cheese

Instructions

  1. Preheat oven to 400°F. Cook sausage in a large skillet over medium heat until browned and crumbly.
  2. Meanwhile, hollow out sub rolls, leaving a ½-inch-thick shell. Brush hollowed out rolls with oil and sprinkle with seasoning. Place on a baking sheet and bake 5 minutes or until lightly toasted.
  3. Spread pizza sauce over seasoning; top with sausage, pepperoni, and cheese. Bake 15 to 20 minutes or until cheese is melted and bubbly.



Side Dish Ingredients

  • 1 (16-oz) pkg baby carrots
  • 3 Tbsp olive oil
  • 1 head broccoli, cut into spears
  • 1 cup Ranch dressing

Side Dish Instructions

  1. Preheat oven to 400°F. Combine all ingredients except dressing on a rimmed baking sheet; spread in a single layer. Season with salt and pepper, if desired.
  2. Bake 20 minutes or until well browned. Serve with dressing for dipping.
