Zucchini and Corn Pasta

Ingredients

  • 12 oz fettuccine
  • 3 ears corn, shucked
  • ½ cup chopped onion
  • ¾ tsp salt
  • ¾ tsp pepper
  • 3 cloves garlic, minced
  • 3 Tbsp olive oil, divided
  • ¾ cup heavy cream
  • 3 zucchini, sliced
  • 1 cup crumbled goat cheese

Instructions

  1. Cook pasta according to package directions.
  2. Meanwhile, cut kernels from cobs; discard cobs. Cook corn kernels, onion, salt, pepper, and garlic in 2 Tbsp hot oil in a large skillet 8 minutes or until lightly browned and tender.
  3. Transfer corn mixture to a blender or food processor. Add cream, and process until smooth.
  4. Cook zucchini in 1 Tbsp hot oil 6 minutes or until lightly browned and tender. Add pasta and corn mixture to skillet, stirring to combine; cook 3 minutes or until sauce is thickened. Sprinkle with cheese.
