Zucchini and Corn Pasta

Ingredients
- 12 oz fettuccine
- 3 ears corn, shucked
- ½ cup chopped onion
- ¾ tsp salt
- ¾ tsp pepper
- 3 cloves garlic, minced
- 3 Tbsp olive oil, divided
- ¾ cup heavy cream
- 3 zucchini, sliced
- 1 cup crumbled goat cheese
Instructions
- Cook pasta according to package directions.
- Meanwhile, cut kernels from cobs; discard cobs. Cook corn kernels, onion, salt, pepper, and garlic in 2 Tbsp hot oil in a large skillet 8 minutes or until lightly browned and tender.
- Transfer corn mixture to a blender or food processor. Add cream, and process until smooth.
- Cook zucchini in 1 Tbsp hot oil 6 minutes or until lightly browned and tender. Add pasta and corn mixture to skillet, stirring to combine; cook 3 minutes or until sauce is thickened. Sprinkle with cheese.
