Chicken Alfredo Pizza
- 2 Tbsp butter
- 4 cloves garlic, minced
- 1 cup heavy cream
- ½ cup freshly grated Parmesan cheese
- ½ tsp crushed red pepper
- 2 cups shredded rotisserie chicken
- 1 (11-oz) pkg frozen cauliflower pizza crusts
- 1 cup chopped spinach
- 1 cup shredded mozzarella cheese
- ½ tsp salt
- ½ tsp pepper
- 1 tsp Italian seasoning
- Preheat oven to 400°F. Melt butter in a small saucepan over medium heat. Add garlic; cook 1 to 2 minutes.
- Stir in cream, Parmesan, and red pepper; reduce heat, and simmer until very thick. Remove from heat; stir in chicken.
- Spoon chicken mixture in a thin layer over crusts. Top with spinach, mozzarella, salt, and pepper. Sprinkle with seasoning.
- Bake 10 to 12 minutes or until crusts are crisp.
