Potato Chip Chicken Tenders

Ingredients

  • 1 (8-oz) bag kettle cooked potato chips, crushed
  • 1 cup grated Parmesan cheese
  • 2 large eggs
  • 1 cup plus 2 Tbsp milk, divided
  • 1 cup all purpose flour
  • 1½ tsp garlic salt
  • 2 lb chicken tenderloins, cut into 1-inch pieces
  • 1 (1-oz) envelope Ranch seasoning mix
  • 1 cup mayonnaise

Instructions

  1. Preheat oven to 400°F. Place crushed chips and Parmesan in a shallow dish. Whisk together eggs and 2 Tbsp milk in a separate shallow dish. Stir together flour and garlic salt in a third shallow dish.
  2. Coat chicken in flour mixture, gently shaking off excess.
  3. Dip chicken in egg mixture to coat; dredge in crushed chips, pressing gently to adhere. Place chicken on a lightly greased wire rack over a rimmed baking sheet.
  4. Bake 15 to 20 minutes or until chicken is done.
  5. Meanwhile, stir together Ranch seasoning mix, 1 cup milk, and mayonnaise in a bowl until blended. Cover, and refrigerate until ready to serve with chicken tenders for dipping.
