Cottage Cheese Wraps

Ingredients
- ¼ cup full fat cottage cheese
- 2 large eggs, divided
- 2 tsp ground flaxseed
- 1 (15-oz) can black beans, rinsed and drained
- 1 (8.8-oz) pkg microwavable brown rice
- 1 (5-oz) pkg baby arugula
- 1 avocado, sliced
Instructions
- Whisk cottage cheese, eggs, and flaxseed in a bowl. Spray griddle or a large nonstick skillet with cooking spray; preheat to medium heat.
- Pour ¼ cup batter for each wrap onto griddle. Cook until tops are covered with bubbles; turn and cook other side until cooked through.
- Serve with beans, rice, arugula, and avocado.
