Cottage Cheese Wraps

Ingredients

  • ¼ cup full fat cottage cheese
  • 2 large eggs, divided
  • 2 tsp ground flaxseed
  • 1 (15-oz) can black beans, rinsed and drained
  • 1 (8.8-oz) pkg microwavable brown rice
  • 1 (5-oz) pkg baby arugula
  • 1 avocado, sliced

Instructions

  1. Whisk cottage cheese, eggs, and flaxseed in a bowl. Spray griddle or a large nonstick skillet with cooking spray; preheat to medium heat.
  2. Pour ¼ cup batter for each wrap onto griddle. Cook until tops are covered with bubbles; turn and cook other side until cooked through.
  3. Serve with beans, rice, arugula, and avocado.
