Blackened Salmon Tacos

Peach-Avocado Salsa

Ingredients

  • ½ lb salmon fillets
  • 2 tsp blackened seasoning
  • 1 Tbsp olive oil
  • 2 Tbsp lime juice
  • 4 corn tortillas
  • 1 cup thinly sliced red cabbage
  • ⅓ cup sour cream

Instructions

  1. Preheat broiler. Rub fish with seasoning.
  2. Drizzle oil in a large cast-iron skillet or ovenproof pan. Add fish to skillet, and broil 3 to 4 minutes per side or until blackened and fish flakes with a fork. Break fish into chunks; drizzle with lime juice.
  3. Warm tortillas according to package directions. Serve fish in tortillas with cabbage, sour cream, and Peach-Avocado Salsa recipe.



Side Dish Ingredients

  • ¾ cup frozen peaches, thawed and chopped
  • ½ cup refrigerated salsa
  • ½ avocado, diced
  • ⅛ tsp salt
  • ⅛ tsp pepper

Side Dish Instructions

  1. Toss together all ingredients in a bowl.
