Grilled Chicken Taco Salad

Ingredients

  • 2 lb boneless, skinless chicken breasts
  • 1 (1-oz) envelope taco seasoning mix
  • 1 Tbsp olive oil
  • 1 (3-count) pkg hearts of romaine lettuce, chopped
  • 2 (15.25-oz) cans whole kernel corn, drained
  • 1 (8-oz) pkg shredded Mexican blend cheese
  • 1 (11-oz) bag tortilla chips, coarsely crushed
  • 1 cup Catalina dressing

Instructions

  1. Preheat grill or grill pan to medium-high heat. Toss together chicken, oil, and seasoning mix until chicken is well coated.
  2. Grill chicken, covered, 5 to 6 minutes per side or until done. Let cool; cut into ½-inch pieces.
  3. Toss together lettuce, corn, cheese, chips, chicken, and dressing in a large bowl. Serve immediately.
