On the Grill
Grilled Chicken Taco Salad

Ingredients
- 2 lb boneless, skinless chicken breasts
- 1 (1-oz) envelope taco seasoning mix
- 1 Tbsp olive oil
- 1 (3-count) pkg hearts of romaine lettuce, chopped
- 2 (15.25-oz) cans whole kernel corn, drained
- 1 (8-oz) pkg shredded Mexican blend cheese
- 1 (11-oz) bag tortilla chips, coarsely crushed
- 1 cup Catalina dressing
Instructions
- Preheat grill or grill pan to medium-high heat. Toss together chicken, oil, and seasoning mix until chicken is well coated.
- Grill chicken, covered, 5 to 6 minutes per side or until done. Let cool; cut into ½-inch pieces.
- Toss together lettuce, corn, cheese, chips, chicken, and dressing in a large bowl. Serve immediately.
