Roasted Shrimp Cocktail

Ingredients

  • 2 lb tail on peeled and deveined large raw shrimp
  • ¼ cup olive oil
  • 1 Tbsp plus 2 tsp lemon zest, divided
  • 3 cloves garlic, minced
  • 2 Tbsp minced fresh parsley
  • 1 cup mayonnaise
  • 2 Tbsp horseradish
  • 2 Tbsp Dijon mustard
  • 2 Tbsp minced capers
  • 2 green onions, minced

Instructions

  1. Preheat oven to 425°F. Toss together shrimp, oil, 1 Tbsp lemon zest, garlic, and parsley on a large, rimmed baking sheet. Spread in a single layer. Bake 8 to 10 minutes or until shrimp are done.
  2. Meanwhile, stir together mayonnaise, horseradish, mustard, capers, green onion, and 2 tsp lemon zest. Serve with shrimp for dipping.
