Peanut-Crusted Chicken Fingers

Ingredients

  • 1 cup milk
  • ½ cup peanut butter
  • 2 large eggs
  • 2 lb chicken tenderloins (see Note)
  • 1 cup all-purpose flour
  • 1 cup finely chopped salted peanuts
  • ½ tsp salt
  • ½ tsp pepper
  • ½ cup vegetable oil

Instructions

  1. Whisk together milk, peanut butter, and eggs in a large bowl. Add chicken, and let stand 30 minutes.
  2. Meanwhile, preheat oven to 400°F. Whisk together flour and nuts in a shallow bowl. Remove chicken from milk mixture; sprinkle chicken with salt and pepper. Dip chicken in flour mixture, pressing gently to adhere.
  3. Cook chicken in hot oil, in batches, in a large skillet over medium heat 2 to 3 minutes per side or until browned. Transfer chicken to a lightly greased wire rack set on a rimmed baking sheet.
  4. Bake 10 minutes or until chicken is done.



Side Dish Ingredients

  • ½ cup mayonnaise
  • 2 tsp apple cider vinegar
  • 1 tsp honey
  • 1 (16-oz) pkg tricolor coleslaw (or use any coleslaw)
  • 2 Gala apples, sliced

Side Dish Instructions

  1. Whisk together mayonnaise, vinegar, and honey in a large bowl. Add coleslaw and apples; toss.
