Cajun Beef Chili

Ingredients

  • 3 lb beef stew meat
  • 1 tsp Cajun seasoning
  • ½ tsp pepper
  • 1 large onion, chopped
  • 1 large green bell pepper, chopped
  • 4 cloves garlic, minced
  • 1 (14.5-oz) can diced tomatoes
  • 1 (14.5-oz) can beef broth

Instructions

  1. Sprinkle beef with Cajun seasoning and pepper.
  2. Combine onion, bell pepper, and garlic in a 5-or 6-quart slow cooker. Place beef over vegetables. Pour tomatoes and broth over beef.
  3. Cover and cook on LOW 6 hours or until beef is tender.

  • 3 large sweet potatoes
  • 3 Tbsp avocado oil
  • 1 tsp salt
  • 1 tsp pepper

Side Dish Instructions

  1. Preheat oven to 400°F. Using a mandoline or a sharp knife, thinly slice potatoes.
  2. Toss together potatoes and oil on rimmed baking sheets; arrange in a single layer on pans. Sprinkle with salt and pepper.
  3. Bake 25 to 35 minutes or until edges are browned and potatoes are crisp. Cool "chips" on wire racks.
