Brush both sides of pastry sheets with butter; sprinkle both sides generously with sugar mixture, pressing gently to adhere.
Tightly roll one short end of 1 pastry sheet towards middle, stopping at center. Repeat with other side of pastry sheet. Repeat procedure with remaining pastry sheet. Wrap pastry logs in plastic wrap and refrigerate 30 minutes.
Preheat oven to 400°F. Cut pastry logs into ½-inch-thick slices; place on 2 large parchment paper-lined baking sheets. Bake 8 minutes. Carefully flip pastries over and bake 8 to 10 minutes longer or until golden and crisp.
