Tuscan Sirloin with Basil-Lemon-Butter Sauce

Ingredients

  • 2½ lb boneless sirloin steaks
  • 2 tsp dried basil
  • 1 tsp garlic powder
  • 1 tsp salt
  • 1 tsp pepper
  • 4 Tbsp butter, divided
  • ½ cup finely chopped onion
  • 2 cloves garlic, minced
  • ½ cup white wine
  • ¼ cup lemon juice
  • 10 Tbsp cold butter, cut into pieces
  • ¼ cup chopped fresh basil

Instructions

  1. Sprinkle steaks with basil, garlic powder, salt, and pepper. Melt 2 Tbsp butter in a large cast iron skillet over medium-high heat. Add steaks, and cook 5 to 6 minutes per side or until a thermometer inserted in thickest portion registers 135°F. Remove from heat, cover, and keep warm.
  2. Meanwhile, in another skillet, melt 2 Tbsp butter over medium heat. Add onion and garlic; cook 3 minutes or until onion is tender.
  3. Add wine and lemon juice; simmer until reduced by half. Reduce heat to low.
  4. Whisk in cold butter, 1 Tbsp at a time, until melted. Stir in basil. Serve sauce over steaks.
