Ground Beef and Sweet Potato Chili

Ingredients

  • ¾ lb ground sirloin
  • ½ green bell pepper, chopped
  • ½ sweet onion, chopped
  • 2 cloves garlic, minced
  • 1 sweet potato, cut into chunks
  • 1 (14.5-oz) can fire roasted diced tomatoes
  • 1½ Tbsp chili powder
  • ¼ tsp salt
  • ¼ tsp pepper
  • ½ cup shredded Monterey Jack cheese

Instructions

  1. Cook beef, bell pepper, onion, and garlic in a large skillet over medium heat until beef is browned and crumbly; drain and transfer to a 3- to 4-quart slow cooker.
  2. Stir in sweet potato, tomatoes, chili powder, salt, and pepper.
  3. Cover and cook on LOW 6 hours.
  4. Top servings with cheese.
