Preheat oven to 400°F. Add orange and apple slices and cranberries to a parchment paper-lined rimmed baking sheet. Bake 30 to 40 minutes or until cranberries begin to burst.
Add juices and wine to a large pitcher; add caramelized fruit, and let stand in refrigerator at least 2 hours or overnight.
Fill 6 glasses half full with sangria mixture; top each with sparkling water. Garnish, if desired.
