Lemon-Pine Nut Rice Pilaf

Ingredients

  • 2 Tbsp butter
  • 3 Tbsp pine nuts
  • 3 cups long grain white rice
  • 1½ (32-oz) carton low sodium vegetable broth
  • 1½ tsp lemon zest
  • 1 Tbsp lemon juice

Instructions

  1. Melt butter in a large saucepan over medium heat; add pine nuts and rice, and sauté 1 minute. Stir in broth, lemon zest, and lemon juice.
  2. Bring to a boil, cover, reduce heat, and simmer 18 to 20 minutes or until rice is tender.
