Preheat oven to 350°F. Cut each apple into 8 wedges. Separate crescent rolls, and place one apple wedge at widest end of each triangle. Roll up and place in a lightly greased 13-x 9-inch baking dish.
Combine butter, brown sugar, and cinnamon in a small saucepan. Bring to a boil, stirring until sugar is dissolved; remove from heat, and stir in vanilla.
Stir in soda, and pour mixture over pastry-wrapped apples.
Bake 35 to 40 minutes or until golden brown.
