Ingredients

  • 2 lb asparagus, trimmed
  • ½ onion, thinly sliced
  • ⅔ cup heavy cream
  • 1 Tbsp whole grain mustard
  • 2 tsp all purpose flour
  • 4 cloves garlic, minced
  • 1 tsp salt
  • 1 tsp pepper
  • 1 (8-oz) block fontina cheese, shredded
  • ½ cup shredded Parmesan cheese

Instructions

  1. Preheat oven to 425°F. Toss together asparagus and onion in an 11 x 7-inch baking dish .
  2. Stir together cream, mustard, flour, garlic, salt, pepper, and 1 cup fontina in a bowl. Pour mixture over asparagus; toss.
  3. Top creamy asparagus with Parmesan and remaining 1 cup fontina. Bake 15 to 20 minutes or until asparagus is crisp-tender and cheese is beginning to brown.
