Slow-Cooked Sweet and Sour Brisket

Ingredients

  • 1 small sweet onion, sliced
  • ¾ lb beef brisket, trimmed
  • ½ tsp salt
  • ½ tsp freshly ground pepper
  • 1 (8-oz) can no salt added tomato sauce
  • 2 tsp unsulphured molasses
  • 1 tsp balsamic vinegar

Instructions

  1. Place onion in a 4-quart slow cooker; place brisket over onions. Sprinkle with salt and pepper.
  2. Whisk together tomato sauce, molasses, and vinegar; pour over brisket. Cover and cook on LOW 6 to 8 hours or until brisket is tender. Slice brisket before serving.

  • 1 large sweet potato
  • 2 tsp butter
  • ⅛ tsp salt, divided
  • ¼ tsp pepper, divided
  • 1 (12-oz) pkg trimmed green beans

Side Dish Instructions

  1. Preheat oven to 425°F. Prick and bake potato 30 minutes or until tender.
  2. Peel potato, and mash in a bowl. Stir in butter and ⅛ tsp each salt and pepper.
  3. Meanwhile, microwave green beans according to package directions; sprinkle with ⅛ tsp pepper.
