Cheesy Ranch Chicken Tostada Stacks

Ingredients

  • ⅔ cup shredded mozzarella cheese
  • 2 Tbsp mayonnaise
  • 2 tsp Ranch dressing mix, divided
  • 4 tostada shells
  • 1 cup shredded rotisserie chicken
  • ¼ cup buffalo sauce
  • 1 green onion, thinly sliced

Instructions

  1. Preheat oven to 400°F. Combine ⅓ cup cheese, mayonnaise, and 1 tsp Ranch dressing mix in a bowl.
  2. Place 2 tostada shells on a rimmed baking sheet. Spread cheese mixture over tortillas; top with 2 tostada shells.
  3. Toss together chicken and buffalo sauce. Place on tostada stacks; sprinkle with ⅓ cup cheese and green onion. Bake 6 to 8 minutes or until cheese melts.

  • 2 tsp olive oil
  • 1 tsp lime juice
  • ⅛ tsp salt
  • 2 cups romaine lettuce
  • ¼ cup thinly sliced red onion

Side Dish Instructions

  1. Whisk together first 3 ingredients in a medium bowl. Add lettuce and onion; toss.
