Smoked Salmon Cucumber Roses

Ingredients
- 2 English cucumbers
- 1 tsp kosher salt
- 1 lemon
- 1 (8-oz) block cream cheese, softened
- 1 (0.5-oz) pkg fresh dill, chopped and divided
- ½ tsp garlic powder
- ½ tsp pepper
- 2 (4-oz) pkg sliced smoked salmon
Instructions
- Slice cucumbers lengthwise into thin ribbons using a mandoline or vegetable peeler. Sprinkle with salt, and let stand 20 minutes. Pat dry with paper towels, wiping off excess salt.
- Grate zest and squeeze juice from lemon.
- Mix together cream cheese, ½ pkg dill, lemon zest, juice, garlic powder, and pepper in a medium bowl until blended.
- Spread cream cheese on cucumber slices; layer with salmon, and roll up to resemble roses, gently pressing ends together to adhere. Sprinkle cucumber roses with ½ pkg dill.
