Smoked Salmon Cucumber Roses

Ingredients

  • 2 English cucumbers
  • 1 tsp kosher salt
  • 1 lemon
  • 1 (8-oz) block cream cheese, softened
  • 1 (0.5-oz) pkg fresh dill, chopped and divided
  • ½ tsp garlic powder
  • ½ tsp pepper
  • 2 (4-oz) pkg sliced smoked salmon

Instructions

  1. Slice cucumbers lengthwise into thin ribbons using a mandoline or vegetable peeler. Sprinkle with salt, and let stand 20 minutes. Pat dry with paper towels, wiping off excess salt.
  2. Grate zest and squeeze juice from lemon.
  3. Mix together cream cheese, ½ pkg dill, lemon zest, juice, garlic powder, and pepper in a medium bowl until blended.
  4. Spread cream cheese on cucumber slices; layer with salmon, and roll up to resemble roses, gently pressing ends together to adhere. Sprinkle cucumber roses with ½ pkg dill.
