Turmeric Chicken Noodle Soup

Ingredients

  • 2 carrots, sliced
  • 1 celery stalk, thinly sliced
  • 1 Tbsp olive oil
  • 1 Tbsp minced garlic
  • 1 tsp grated ginger, optional
  • 3 cups less sodium chicken broth
  • 1½ tsp ground turmeric
  • ½ (8-oz) pkg soba noodles
  • 1½ cups shredded rotisserie chicken
  • ¼ cup chopped fresh cilantro, optional

Instructions

  1. Cook carrots and celery in hot oil in a Dutch oven over medium-high heat 6 to 8 minutes or until tender. Stir in garlic and, if desired, ginger; cook 1 to 2 minutes or until fragrant.
  2. Add broth and turmeric; bring to a simmer. Add noodles and chicken; cook until noodles are al dente. Sprinkle with cilantro, if desired.
