Cornmeal Hush Puppies

Ingredients

  • 6 slices bacon, chopped
  • ¼ cup minced onion
  • ¼ cup minced celery
  • 1 cup yellow cornmeal
  • 1 cup all purpose flour
  • 2½ tsp Creole seasoning
  • 2 tsp baking powder
  • ½ tsp baking soda
  • 1¼ cups buttermilk
  • 1 large egg
  • 1 (48-oz) bottle vegetable oil

Instructions

  1. Cook bacon in a large skillet over medium heat until crisp. Drain on paper towels, reserving 1 Tbsp drippings in skillet. Add onion and celery to skillet; cook 5 minutes or until tender. Remove from heat.
  2. Stir bacon into onion mixture; let cool slightly.
  3. Whisk together cornmeal, flour, seasoning, baking powder, and baking soda in a large bowl. Add buttermilk and egg, whisking until mixture is smooth.
  4. Pour oil to a depth of 4 inches in a large Dutch oven and heat over medium heat until a thermometer registers 350°F.
  5. Drop batter, in batches, by heaping tablespoonfuls into hot oil. Fry 3 to 4 minutes per side or until golden brown. Drain on a wire rack set over paper towels.
