Pork Medallions with Mustard Sauce

Ingredients

  • 1 (1-lb) pork tenderloin, trimmed
  • 1½ Tbsp butter, divided
  • ½ Tbsp all purpose flour
  • ¾ cup chicken broth
  • ½ Tbsp Dijon mustard

Instructions

  1. Cut pork into 2-inch-thick slices. Pound pork to ½-inch thickness between plastic wrap using a meat mallet. Season with salt and pepper, if desired.
  2. Melt 1 Tbsp butter in a large nonstick skillet over medium-high heat. Add pork and cook 3 to 4 minutes per side or until done. Remove from skillet, and keep warm.
  3. Melt ½ Tbsp butter in skillet over medium heat. Add flour; cook, stirring constantly, 2 minutes. Add broth and mustard; cook until thickened. Serve sauce over pork.

  • 1 (24-oz) pkg refrigerated mashed potatoes
  • 1 (8-oz) pkg thin green beans
  • ¼ tsp garlic powder
  • ¼ tsp salt
  • ¼ tsp pepper

Side Dish Instructions

  1. Heat mashed potatoes according to package directions.
  2. Steam beans according to package directions; toss with garlic powder, salt, and pepper.
