Flank Steak Sandwiches

Ingredients
- 2 lb flank steak
- 6 hoagie rolls, split
- ½ cup olive oil
- ¼ cup soy sauce
- ¼ cup honey
- 3 Tbsp balsamic vinegar
- 1 Tbsp minced garlic
Instructions
- Preheat grill or grill pan to medium-high heat. Season steak with salt and pepper, if desired. Grill steak, covered, 5 to 6 minutes per side or until done. Grill rolls, cut sides down, 1 minute.
- Meanwhile, in a small saucepan, combine oil, soy sauce, honey, vinegar, and garlic; bring to a boil, reduce heat, and simmer until sauce is thickened.
- Thinly slice steak against the grain. Serve steak on toasted rolls, drizzled with sauce.
Side Dish Ingredients
- 2 Tbsp lemon juice
- 2 Tbsp olive oil
- 1 (22-oz) pkg frozen roasted potatoes
- ½ cup shaved Parmesan cheese
- 1 (5-oz) pkg arugula
Side Dish Instructions
- Preheat oven to 425°F. Spread potatoes in a single layer on a lightly greased baking sheet, and bake 20 minutes or until golden brown.
- Toss together arugula, cheese, oil, and lemon juice in a bowl just before serving; season with salt and pepper, if desired.
