Cheesy Chicken Marsala

Angel Hair Pasta and Roasted Broccoli

Ingredients

  • 2 lb boneless, skinless chicken breasts
  • ½ cup all purpose flour
  • 2 Tbsp butter
  • 2 Tbsp olive oil
  • ¾ cup Marsala wine
  • ¾ cup chicken broth
  • 6 slices mozzarella cheese

Instructions

  1. Halve chicken crosswise and pound to ½-inch thickness between plastic wrap using a meat mallet. Season chicken with salt and pepper, if desired; dredge in flour, shaking off excess.
  2. Melt butter with oil in a large skillet over medium-high heat. Cook chicken, in 2 batches, 2 to 3 minutes per side or until browned. Return all chicken to skillet.
  3. Stir in wine and broth; bring to a boil; reduce heat, and simmer 3 to 4 minutes or until sauce is thickened and chicken is done. Top chicken with cheese; cover and let stand until melted.



Side Dish Ingredients

  • 2 Tbsp olive oil
  • 1 head broccoli, cut into florets
  • 1 (16-oz) pkg angel hair pasta

Side Dish Instructions

  1. Bake 10 minutes or until crisp-tender. Season with salt and pepper, if desired.
  2. Preheat oven to 400°F. Cook pasta according to package directions.
  3. Toss together broccoli and oil on a lightly greased rimmed baking sheet.
