1 (12-oz) pkg Italian style smoked chicken sausage, sliced
3 cups frozen cubed sweet potatoes
1 onion, chopped
2 cups chopped baby spinach
1 cup 2% reduced-fat milk
10 large eggs
¾ tsp salt
¾ tsp pepper
Instructions
Preheat oven to 400°F. Cook sausage in a large cast-iron or ovenproof skillet over medium-high heat 4 to 6 minutes or until browned. Remove from skillet. Add potatoes and onion to skillet; cook 5 to 7 minutes or until potato is just tender. Stir in spinach until wilted.
Meanwhile, whisk together milk, eggs, salt, and pepper in a bowl; pour egg mixture and sausage over potatoes. Bake 15 minutes or until center is set.
