Green Chile Cheeseburgers

Ingredients

  • 1 Tbsp butter
  • ¼ cup diced onion
  • 1 (4-oz) can fire roasted diced green chiles
  • ½ cup green enchilada sauce
  • 2 ground beef burgers
  • 2 slices pepper Jack cheese
  • 2 hamburger buns
  • ½ cup coarsely crushed tortilla chips

Instructions

  1. Melt butter in a saucepan over medium heat; add onion, and cook, stirring occasionally, 5 minutes or until tender. Stir in chiles and enchilada sauce; cook until slightly thickened.
  2. Meanwhile, cook patties in a large, hot skillet 5 to 6 minutes per side or until no longer pink.
  3. Top each patty with 1 cheese slice.
  4. Serve cheese-topped patties on buns with enchilada sauce mixture and crushed tortilla chips. Serve immediately.



Side Dish Ingredients

  • ½ (28-oz) pkg frozen extra crispy potato tots
  • ½ tsp kosher salt
  • ½ tsp ground ancho chile pepper

Side Dish Instructions

  1. Bake potato tots according to package directions. Stir together salt and chile pepper; sprinkle over hot tots.
