Bring sugar and water to a boil in a small saucepan, stirring occasionally. Boil 2 minutes or until sugar is dissolved. Pour into a heat-proof bowl; chill at least 4 hours.
Process sugar mixture and strawberries in a blender until smooth. Stir in prosecco and lime juice. Mixture will bubble up. Once bubbles subside, pour into pop molds. Skim and discard any foam from surface.
Cover molds, and freeze at least 8 hours.
