Pumpkin Spice Overnight Oats
- 2 cups whole milk
- ½ cup canned pumpkin puree
- 2 Tbsp maple syrup
- 1½ tsp pumpkin pie spice
- 1 tsp vanilla extract
- ¼ tsp salt
- 1½ cups old fashioned oats
- ¼ cup chopped pecans
- ¼ cup sweetened dried cranberries
- ¼ cup white chocolate chips
- Whisk together milk, pumpkin, syrup, pie spice, vanilla, and salt in a large bowl. Stir in oats. Cover, and refrigerate 2 hours to overnight.
- Divide oats among bowls; top with nuts, cranberries, and chocolate chips.
